Blueberry Coffee Cake with Almond Flour

Cake Ingredients:

2 1/2 c ground almond flour
1/3 c coconut flour
1/4 tsp sea salt
1/2 tsp baking soda
1/2 c honey
3 eggs, whisked
1/4 c liquid coconut oil
2 T poppy seeds
1 T lemon juice
1/2 tsp vanilla extract
2 c frozen blueberries

coconut oil for greasing a large, round baking dish

Topping:
2/3 c almond meal
1/4 c coconut sugar
2 T coconut oil

With a fork mash the topping ingredients together and mix well.

Pre-heat oven to 375 degrees. Mix all dry before incorporating all wet. Grease a large, round baking dish with a 2 " lip. Mash the batter evenly into the baking dish. Top the batter with an even layer of the topping.

Bake for 35-40 minutes, when fork comes out clean aside from any topping. Let cool and serve with a dollop of your favorite vanilla ice cream or along a warm mug of tea or coffee.
