Lindsay's Green Pancakes

kale spinach vegan pancakes

High Speed Blender:
1 c kale, torn
1 c spinach (I used frozen)
1 T ground flax seed
3/4 c almond milk (I used coconut almond milk)
1 banana
1 T peanut butter, unsweetened, unsalted, no oil added
1 tsp maple syrup

-zip in high speed blender until well blended.

Add this to the banana greens in the blender:
1 c spelt flour or whole wheat pastry
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda

-blend until smooth.

Batter will be same as regular pancake mix consistency.
Fry with coconut oil in a cast iron skillet. Flip when edges brown and a few air pockets emerge.
