Macrobiotic Cinnamon Agave Cookies
2 ½ c spelt flour
3 T sesame seeds
1 ½ T ground cinnamon
1 tsp baking soda
½ tsp sea salt
1 tsp pure vanilla extract
2/3 c coconut oil (liquid state)
¼ almond milk
½ c agave syrup
Maple sugar crystals
Preheat oven to 350 degrees. Whisk together all the dry ingredients in a large bowl. Whisk all the wet in a smaller bowl. Spare the maple sugar crystals for sprinkling at the end.
Pour the wet into the dry and combine with a spatula. On an oiled cookie sheet dollop large tablespoons of dough and press down with spoon to spread dough. Once a sheet is filled sprinkle each cookie with some maple sugar crystals.
Bake cookies for 8-10 minutes. Allow to cool and transfer to a wire rack. These cookies go great with unsweetened vanilla almond milk!!
