Packin' It PB Bar
5-7 cups puffed millet (or brown rice crispy cereal)
1/2 c unsweetened peanut butter
1/2 c brown rice syrup or grade b maple syrup
1 tsp vanilla
unsweetened shredded coconut
flax seeds (not ground)
Barely heat the peanut butter, syrup of choice, and vanilla in a small saucepan. Stir constantly until it is well mixed but still wet and runny. It will harden up fast so watch out!
Add millet and any of your add-ins. Press into a small pan or baking dish with a high lip. Cut out servings and enjoy or wrap for on the go.
