Quinoa Coconut Porridge

vegan cardamom coconut milk quinoa cashews breakfast kid approved

As seen in Conscious Living TV.
Makes 4 servings

4 cups cooked grain (I like 3 c quinoa and 1 c brown basmati rice)
1 can coconut milk
1/2 tsp cardamom powder
1 tsp cinnamon
Handful of raisins

Per bowl:

Handful chopped unsalted cashews
Handful pumpkin seeds
1 T hemp seeds
Sprinkle of large flaked coconut

Optional:
Drizzle of honey
Sliced banana, mango or strawberry
