Strawberry Rice Crispy Treats
6 c brown rice cereal
1 cup of broken freeze dried strawberry pieces
2 c brown rice syrup
1 1/2 c almond butter, unsweetened
pinch of sea salt
dash of vanilla extract
In a large bowl mix rice crispies and strawberries.
Over a low flame heat the brown rice syrup, almond butter and pinch of salt while whisking constantly. Once the ingredients have blended well remove from heat. Pour over rice crispies mix and stir to combine.
Press into a container sizing for your desired thickness of a treat.
They will be ooey gooey so let cool completely. Slice and expect a soft crispy. Even better stored in a refrigerator for greater longevity and easier consumption with less mess. But I can never wait and eat them on the softer side! Then I serve my kids the chilled ones.
