Banana Honey Coconut Muffins

almond meal coconut flour bananas

makes 12 muffins

1/4 c honey
1/3 c maple syrup
2 large mashed bananas
1 tsp vanilla
3 eggs
1/2 c unsweetened almond vegan yogurt

1/2 c coconut flour
1/3 c unsweetened shredded coconut
2 c almond meal
1/2 tsp sea salt
1 tsp baking soda
1 tsp baking powder
1/4 c chopped walnuts

Preheat oven to 350. Whisk together wet ingredients separately from dry. Whisk dry to break up any clumps. Mix the wet into the dry and incorporate ingredients well. Fold in walnuts. Fill oiled tin or lined cups to brimming.

Bake 350 oven for 30 minutes. Top will be golden and center poke comes out clean. Cool in pan 10 minutes and then transfer to a wire rack to completely cool. Store for up to 4 days.
