Honey Mustard Brussel Sprouts with Black Sesame

vegan brussel sprouts black sesame honey mustard

3 T German mustard
2 T honey
2 T extra virgin olive oil
1 T apple cider vinegar
1 T brown rice vinegar
pinch of pepper

Brussel Sprouts:
olive oil
1 lb brussel sprouts, shaved or thinly sliced
1/4 c honey crisp apple, or other tart apple, diced with skin on
2 T black sesame seeds

Heat olive oil in a cast iron skillet, or whatever you saute in, and toss in shaved sprouts. Saute until they begin to wilt. Add the apple and let cook another few minutes. Lastly, toss in the sesame seeds and cook a few minutes more. Sprouts should be bright in color but tender.

While they are cooking up, whisk up the dressing ingredients in a medium bowl. Pour the cooked sprouts into the dressing bowl and toss gently. Transfer to your serving plate.
