Midwest Soba

soba cucumber baby greens beet greens

1/2 c steamed edamame beans out of pods
1 medium cucumber , sliced into 1/2 moons
4-6 cups thinly sliced greens: baby beet greens, baby swiss chard, baby lacinato kale
1 c julienne carrots
1/2 c fresh basil, slivered
1/2 c fresh mint, slivered
1/2 c chives, minced
1/3 c toasted sesame seeds

2-4 servings of soba noodles (typically they come in bundles, a bundle is a serving)
6-8 cups water
sea salt

2 T lemon juice
2 T apple cider vinegar
3 T shoyu
1 T clover honey
3 T olive oil
1 1/2 tsp curry powder
fresh ground pepper
1" ginger root, grated

Cook soba to package directions. Add sea salt to the water as you bring the water to boil.

Whisk the dressing and combine all the veg and herb in a large bowl. Drain the soba, rinse, toss with all.
Garnish with cucumbers.
